This a super quick and easy recipe that’s inspired by a dear friend who was taken too soon.
We had Christmas dinner once year, spouses and all and this friend and her husband whipped up a lovely ice cream cake for dessert. Layers of vanilla, chocolate and strawberry ice cream, berries, chocolate and nuts. It was ceremoniously sliced up and served with a boozy chocolate sauce that was whipped up in a matter of minutes and served warm.
While we had it for Christmas, I feel like St Patrick’s day feels like the perfect time of year to enjoy this recipe!
Ingredients
- 1/3 cup Bailey’s Irish Cream
- 1/3 cup milk
- 1/3 cup whipping/thickened cream
- 2/3 cup dark chocolate chips
- pinch of salt
Preparation
Place all the ingredients in a small saucepan and heat on low until the chocolate is melted. Cook a little longer if you desire a slightly thicker sauce.
Serve over good vanilla ice cream and decorate with sprinkles if you so desire.
The best sort of chocolate sauce! I’ve done this with eclair icing before. 😛
